Improved Imo's Salad

A family sized salad made from simple, healthy ingredients to boost the nutrition of Imo's Garden Salad.

- 1 Head Romaine Lettuce
- 8 oz Fresh Spinach
- 10 oz Matchstick Carrots
- 8 oz Mozzarella Shredded
Wash, and dry the romaine lettuce. Remove the end and chop into bite size pieces. I usually just cut it horizontally into 1" strips.
In a large salad bowl, combine the lettuce, spinach, carrots, and mozzarella. Toss to mix.
Serve with your favorite salad dressing. Sweet Italian would be the traditional, St. Louis style dressing.
- If you are in St. Louis, use Provel instead of mozzarella. It is regional, so it cant be found in most of the country. You probably wouldn't like it anyway...
- For a vegan salad option, substitute the cheese for chopped walnuts.
