Equipment

  • Chef Knife

  • Giant Salad Bowl
  • Salad Spinner (not necessary, but recommended)
  • Salad Tongs

Ingredients
  

  • 1 Head Romaine Lettuce
  • 8 oz Fresh Spinach
  • 10 oz Matchstick Carrots
  • 8 oz Mozzarella Shredded

Instructions
 

  • Wash, and dry the romaine lettuce. Remove the end and chop into bite size pieces. I usually just cut it horizontally into 1" strips.
  • In a large salad bowl, combine the lettuce, spinach, carrots, and mozzarella. Toss to mix.
  • Serve with your favorite salad dressing. Sweet Italian would be the traditional, St. Louis style dressing.

Notes

  • If you are in St. Louis, use Provel instead of mozzarella.  It is regional, so it cant be found in most of the country.  You probably wouldn't like it anyway...
  • For a vegan salad option, substitute the cheese for chopped walnuts.
