Fast Focaccia (No Yeast!)

Focaccia for the Masses!

Focaccia is a fantastic Italian bread, but it’s hard to find it at the stores without it being horribly dry. This recipe takes a common Pillsbury dough, dresses it up a bit, and the result is super tasty.

Why I Love This Recipe?

I made this for the first time and I was amazed at the flavor and texture that a few tweaks to pizza dough can make amazing focaccia.  For the effort it took to make this recipe, it was like there was a multiplier somewhere for how good it could be.  Flippin magic.

Ingredients & Equipment

Ingredients Needed to Make Pizza Dough Focaccia

  1. Pillsbury Thin Pizza Crust: Simple to purchase and reasonably priced, this is a go-to at my house.  They last a few weeks in the fridge, so I usually keep one on hand for a homemade pizza or now, Focaccia!
  2. Olive Oil: True focaccia has a good deal of olive oil on it to crisp up the top while it bakes.  Use a hearty olive oil with actual flavor.  Skip the extra virgin olive oil and opt for something robust, you actually want to taste it in this recipe.
  3. Sea Salt: Fine grain salt is to the goal, regardless of the source.  Flaky sea salt is okay, but you don’t want to be crunching on the salt as you eat it.
  4. Garlic Powder, Rosemary, Italian Seasoning:  I opted for simply sprinkling garlic powder over the top, but you could get as fancy as you like.

Equipment Needed to Make Easy Focaccia

  1. Baking Pan, Cookie Sheet: Whatever you call it, I suggest getting a good one and being nice to it.  These should last a lifetime and they are one of the most versatile tools in my kitchen.
  2. Parchment Paper:  I love using this stuff to make cleanup a breeze.  No soaking, no scrubbing, just cooking.
  3. Basting Brush:  I use this to apply olive oil to the dough. I prefer the silicon brushes, as they work pretty well and they come clean instantly.
  4. Kitchen Scissors:  This is the best way to cut both the dough and the finished focaccia.

How to Make Easy Focaccia Bread

  1. Preheat the Oven as directed on the roll of dough (Pillsbury thin crust pizza).
  2. Cut the dough in half and roll out each onto a greased baking sheet (or parchment paper)
  3. Uusing your fingers, poke holes into the dough as seen in the picture.  This allows the olive oil and flavor to pool, and gives that classic look.
  4. Brush the bread with olive oil, be generous but not sloppy.
  5. Sprinkle evenly with your seasonings of choice.  Kosher salt, sea salt, garlic powder, onion powder, Italian seasoning blend, and/or rosemary.  Fresh rosemary is great, since you can put a sprig in the the bread to cook, and remove it when its finished.  Rosemary is terrible to chew one…  I can’t think of any fresh herbs that wouldnt be great here.  Try everything!
  6. Bake as directed on the package.  Remove from the oven when finished and allow to cool a bit.  I cut mine with kitchen scissors and it worked great!

  • Parchment Paper or grease the pan
  • Kitchen Scissors optional

Ingredients
  

  • 1 Tube Pillsbury Thin Crust Pizza Dough
  • ¼ Cup Olive Oil
  • Sea Salt
  • Garlic Powder
  • 2 Sprigs Rosemary Divide in half

Instructions
 

  • Preheat the oven to 425°F. Move the rack to the middle position. Grease the baking sheet with olive oil, or line it with parchment paper.
  • Remove the dough from the package, and slice the roll in half. Unroll each piece and place them side by side on the baking sheet. Using your fingers, make dents in the dough (See Picture)
    1 Tube Pillsbury Thin Crust Pizza Dough
  • Liberally brush the dough with olive oil. Sprinkle with sea salt, garlic powder, and fresh rosemary.
    ¼ Cup Olive Oil, Sea Salt, Garlic Powder, 2 Sprigs Rosemary
  • Bake for 12-15 minutes or after the top has browned. Remove from the oven, cut, and serve.
